our processes

After a harvest made by hand, full of passion and care, the bunches arrive at our facilities, where a meticulous table selection begins. Here, each grape is treated with respect, like a work of art that deserves individual attention.

Guided by the age of the plots, we orchestrate the harvest and organize which tanks will be in charge of housing the production of the youngest wines or the wines that will be aged longer. Some will tell the fresh stories of youth, while others will keep the tales aged by time in their barrels.

Throughout this process, the purity of our wines is revealed, since they are created organically, without chemical additives, in a natural dance with the very essence of the land.

elaboration & maceration

In our creation room, we have 20 stainless steel tanks of various volumes, adapted to the needs of the tasks and phases of winemaking.

 

The first masterpiece is maceration, an essential process that happens at a controlled temperature, since it is here where the aromatic and phenolic substances pass from the skins to the must, and will be key to determining the characteristics of our future wine.

After maceration, comes alcoholic fermentation, an exciting chapter where indigenous yeasts take the stage. These yeasts give our wines authentic flavors that capture the essence of the terroir.

Aging

We have 700 oak barrels with a capacity of 225 liters per barrel. The wood we select plays a crucial role in the quality of our wines; For this reason, French wood is preferred in a greater proportion than American wood, which is only used in oak and aged wines in small percentages.

The aging time in the barrel ranges from six months for oak wines to thirty months for our Gran Reserva on average. Although sometimes our wines need a little more time in the barrel to finish making. The wine is what marks its time, since it is a living organism and as such its natural evolution must be respected.

signature wines

Our signature wines have their own malolactic fermentation in two new French oak barrels, giving them a special aromatic profile and a unique evolution compared to the rest of our wines.
